Dec.2.2014 酒造り"Synchronicity I"

早くも師走です。

先週末は小春日和でしたが、これからは冬本番ですね。

さて今年の冬は酒造会社で日本酒の仕込みの仕事をしています。信楽から15kmほど山を下りた東海道旧宿場町の水口町にある、笑四季(えみしき)酒造さんにお世話になっています。

こちらでは機械化していた作業を敢えて手作業に戻して、コントロールの精度を高めたこだわりの製法で造っています。

秒単位の洗米や、手入れ(蒸した米を冷ますためにムシロに広げる作業)を手作業で行っています。

この蔵を引っ張っている若社長は優秀な杜氏でもあり、常に酒造りのことを考えていて、決断と行動が早く気っぷのいいクレバーな方です。

本格的に仕込みに入る前に倉庫の整理をしましたが、その際に古い酒造り道具が処分されたので、たくさん分けて頂きましたよ。大きなタライも頂きました。何に使うかは決めていませんけどね。

ところで、蔵の一部に休憩部屋がありTVを見れるんですが、今NHKで放映中の連続ドラマ「マッサン」はとても面白いですね。80年くらい前の日本が舞台ですが、その中の酒造りのシーンで手入れの作業や僕が頂いたのと同じ昔の道具が登場していました。酒造りの仕事の現場で、同じような場面をTVで観るという面白いタイミングでした。

更にこのドラマのモデルのニッカウヰスキーの蒸溜所がある北海道・余市は僕のルーツの一つでもあり、ご先祖には杜氏もいたらしいです。不思議なシンクロです。

It is December early. It was Indian summer, but is almost winter from now on late last week. By the way, I do work learned of the sake in a brewing company in this winter. 

We return the work that I mechanized to manual labor by this liquor brewing daringly and make sake with the manufacturing method of the feelings that raised precision of the control. It is manual labor by cleansed rice and the care (work to widen to  Bamboo mat to cool the rice which I steamed) of the second unit.

We cleaned the warehouse yesterday. Because an old sake brewing tool was disposed of, I got it. I had the big tub. I don't decide what I use it for. By the way, I can watch TV in the break room of the storehouse. Serial drama [Massan] televising in NHK is very interesting now. It is a story from the Japanese true story which made whiskey first in Japan. Japan around 80 years ago is a stage. There was the scene which the work of the sake brewing and an old tool left in that. It was the timing when it was interesting that it watched a similar scene in TV in the work site of the sake brewing.

There is the distillation place of Nikka whiskey Co., Ltd. of the model of this drama in Yoichicho of Hokkaido (a Japanese northern country). Yoichicho is one of my roots. In addition, one of my ancestors seems to have been a chief brewer. It is mysterious synchronicity.
